Butter-Making [duchas:4957989]
When the butter is churned it is lifted out of the churn into what is called a "cop" with two small buttered spades. Then the buttermilk is washed out of it with water, but sometimes it is squeezed out of it with the butter-spades. It is then salted and the salt is mixed well through it so as no part of it will be left unsalted. Sometimes it is made into oblong-shaped lumps
